We dish up a delicious ostrich recipe from Masterchef SA

Cape Town – The amazing food dishes that the Masterchef SA contestants create have us salivating every Thursday night.

We still haven’t forgotten that perfectly cooked ostrich dish Sipho served on episode three in the mystery box challenge.



So we decided to find the recipe and share it with our readers.

Here’s the delicious recipe courtesy of Masterchef SA:

Ostrich fillet with sweetcorn parcels and pinotage jus

Ingredients:

1 ostrich fillet
1 boerewors off casings
1 sweet in cob with husks
250 ml red wine
1 leaf spinach shredded
15 ml cake flour
15 ml maltabella
5 ml rajah curry powder
1 egg
30 ml milk
Salt and pepper
100 ml olive oil
30 ml Oros
1 onion chopped
Marinade for ostrich
½ cup olive oil
1 cup red wine
Pinch of salt and pepper
15 ml garlic flakes
5 ml chutney

Method:

For ostrich:

1. Marinade the ostrich at least for 30 minutes.
2. Fry onion, boerewors and rajah curry powder and mix with sweet corn, spinach, egg, flour and maltabella, four rulle and mix to a right consistency. Season with salt and pepper.
3. Fill a put with boiling water. Line the husk on top of the siring. Put a spoonful of the wine mixture in the husk and wrap it . Put on the steamer and steam for 30 minutes or until cooked.

For the red wine jus:

1. Fry onion in olive oil.
2. Add wine and stock and herbs.
3. Reduce until half.
4. Strain and add Oros and reduce to a correct consistency.
5. Finish with butter to give a glossy shine.
6. Season and set aside until needed.

For the ostrich:

1. Heat the griddle pan until hot.
2. Take the fillet off the marinade, season and put in the griddle for 3 minutes on each side.
3. Let the meat rest before serving it.
